Residues of veterinary drugs as well as chemical contaminants can not only prejudice food safety, but can also negatively influence the manufacture of yoghurt and cheeses. This is very important in the case of antimicrobials. The use of mastitis remedies, particularly those used in dry cows, will be discussed in the context of local and international regulations. Heavy penalties are given by dairy processing plants to producers whose milk contains undesirable residues or contaminants. It should be noted that even the use of vermin and fly control in dairy parlours is strictly regulated. Stock remedies registered for use in meat animals for the control of internal and external parasites may be prohibited for use in dairy cattle. Withdrawal times must be observed strictly in the dairy industry and veterinarians can be penalised should they be party to the use of drugs not registered for lactating cows. Precautions which should be taken to control or prevent residues and contaminants in dairy products as well as the principles for responsible use of stock remedies and scheduled drugs on dairy farms will be dealt with in this module.
